A ham hock or pork knuckle is the joint between the tibia/fibula and the metatarsals of the foot of a pig, where the foot was attached to the hog's leg. It is neither part of the ham nor the ankle or foot, but rather the extreme shank end of the leg bone. Smoked ham hocks include not just the meat, but bone, fat and other tissues. For those of you interested in the health benefits inherent in bone broth, ham hocks are for you. Smoked ham hocks impart a rich, smoky flavor to dishes that require longer cooking periods such as soups.
